The Scandinavian fish soup is charming in summer
Various fish dishes are the best to eat in summer. The delicious soup can also made from a small fish if you put together a lot of vegetables but most importantly good broth is the soul of fish soup. If you use whole fish, it is a good idea to cook the broth from the fish kennels and backbones. Add some salt in the broth and sift it before adding other raw materials to the soup. Also, remember that the fish matures in no time, so it should be added to the soup when the vegetables are already ripe. After adding the fish, the soup does not have to be cooked, but let it brew for a while.
serves 4-5, time 60 min.
For the soup
800 g salmon
30 g butter
1 l water
1 fish stock cube (if you don´t have fresh fish)
200 ml cream
150 g black pepper cheese
Peel the potatoes, carrots and onion. Cut the potatoes into pieces. Dice the salmon, onion and carrots. Bring the water including fish cubes, pepper and onions to the boil. Add potatoes and carrots and cook for about 10 minutes. Add the salmon pieces and cook for another few minutes. Melt butter, cream and cream cheese in it. Finally, taste with finely chopped dill and salt.
Serve scandinavian fish soup immediately with butter and dark bread. Enjoy!
